Chocolate Peppermint Kisses

Freckled Face 2 loves being in the kitchen cooking and baking. One of her favourites at the moment are these Chocolate Peppermint Kisses. She wanted to share the recipe with you! These are really good for Christmas treats, but work all year round too! They are great for sharing with friends and family.

Chocolate Peppermint Kisses

Ingredients

Biscuit – 200g/7 oz room temperature butter

100g/4 oz caster sugar

4 tbsp cocoa powder

300g/10 oz self-raising flour

Filling – 1/3 tin of condensed milk (maybe a bit more if you like a lot of filling!)

icing sugar (500g pack should be plenty)

a couple drops of peppermint extract

a couple drops of red food colouring

What to do

Preheat the oven at 180

In a large bowl, mix together the butter and sugar with either a wooden spoon or an electric mixer. You want it to be a light and fluffy consistency.

Sift in the cocoa powder and flour and mix together until smooth. When the dough starts to become quite stiff to stir, – use your hands to squeeze it together.

Take about a teaspoonful or tablespoonful (depending on how big you want the kisses to be) of the dough and roll it into a ball. Place it on a baking tray (lined with greaseproof paper), and squish down a little with the base of your hand. Get a fork and press down slightly to make marks on top. Repeat until all the dough is gone! (remembering to make sure you have an equal amount)

Put in the oven to bake for roughly 10 minutes. When baked, leave to cool.

Whilst they’re baking, you can make the filling. Get a bowl, and mixing all of the ingredients together. Adding in little bits at a time. The mixture needs to be thick in consistency, so that when you pick a spoonful up, it hardly drips off. TOP TIP – taste it to make sure you’re happy with it!

When the chocolate biscuits have cooled down, flip half of them over and put a teaspoonful (ish) of filling on them. Pop the other half of the biscuit on top to finish them off.
